Greek Poutine

Or Greek fries. Whatever you want to call it, it's delicious.
Not entirely terrible for you either!

I love these fries. I had never had much success getting crispy yet fluffy fries in the oven. Then I discovered Leanne's recipe, a godsend. They are fan-freaking-tastic. I make them slightly different than her's: I chop, soak, dry, coat with tapioca starch and coconut oil, add some salt, spread on sheet, bake, and finally burn my tongue because I am too impatient to let them cool.

Leanne's Fries
Feta Cheese
Kalamata Olives (pitted is easier, but either work)
Balsamic Sauce

Balsamic Sauce

1 Cup Balsamic Vinegar
1-2 Minced Garlic Cloves (1 large or 2 med/small)
1 tsp Italian spices


1. Prepare and start baking the fries, using either Leanne's or my method.
2. Half way through baking the fries, start making the sauce. Mix the vinegar, garlic, and spices in a sauce pan. Heat on low/med for 10-15 minutes. You are just warming the sauce and letting the flavours mingle.
3. Once the fries are done, place in a bowl, sprinkle feta cheese on top, toss on some olives, then drizzle some sauce over it all. Sprinkle some more dried spices on if you'd like.


*If it were summer and I had more fresh herbs available I probably would have added them to the sauce, rather than dried herbs.
*Next time I think I'll add some spinach and diced tomatoes into the mix!
*You'll probably have left over sauce, unless you use a lot on the fries. Use it as salad dressing!!
